I have tried many fish fry seasoning blends, including several commercial mixes and a variety of homemade recipes. This is my personal favorite. It is flavorful, simple, and enhances the flavor of any panfish. It is excellent with catfish. Enjoy!
1/4 C yellow cornmeal
1 Tbls. thyme
1 Tbls. paprika (I typically use Hungarian for this)
1 tsp. finely ground black pepper
1 tsp. (scant) granulated table salt
1/2 tsp. granulated garlic
1/2 tsp. cayenne*
*don’t skip this — it is not hot in this amount and really adds to the flavor; I prefer 1 tsp. and consider that amount “medium” spicy. If concerned, start with 1/4 tsp. and taste it.
Combine all ingredients and mix well. Store in a sealed container in a cool, dry cupboard.
