Mediterranean Lamb Spice Blend

This lamb spice blend is rooted in a culinary traditions honed for fire-roasted centuries throughout the Mediterranean.  The medley of flavors complement lamb beautifully and open the door to a whole new world for the uninitiated.  Only slightly richer than beef, lamb is meat that should not be overlooked by full-flavored omnivores. Make this spice blend ahead of time and have it ready for use in marinades, soups, and stews. Your taste-buds will thank you.

1/2 Tbl. crushed dried thyme leaves
1 Tbl.  crushed dried oregano leaves
1/2 Tbl.  dried crushed mint
1 tsp. Cumin
1 tsp. finely chopped rosemary
1 tsp. finely ground black pepper
1 tsp. table salt
1/2 tsp. cardamom powder
1/8 tsp garlic powder

Mix all ingredients and store in a sealed container and store in a dry cupboard.
